We’ve already established that I love this season: the sights, the sounds, the football … and the tastes. Even before the weather cools down, as fall approaches, I start pulling out the soup recipes. And it may be 90 degrees outside, but I’m chowing down on some chili and Fritos. Ain’t no shame in my soup-eating game!
I have quite a few of these cold-weather soup recipes, but one of my favorites is a traditional, hearty Chicken Tortilla Soup. It’s full of veggies and beans, and well, chicken. The veggies make me feel like I’m doing the right thing for my family. You see, I still struggle with being in my 30’s and not really wanting to eat my veggies. I’d rather have chocolate. But hey, I’m a parent, so I have a set a good example. Right? And this soup makes that very, very easy. 🙂

I also love this recipe because I can prepare it all beforehand, freeze it, and just pull it out one morning and throw it into the crock pot. I don’t even cook the chicken beforehand. It will cook in the crock pot and be oh so tender and delicious. And if you have a smaller family, like me, you can stick the leftovers in the freezer and have it on hand for another day. So many options!
- 4 chicken breasts, cooked and chopped
- 1 can pinto beans
- 1 can black beans
- 1 can yellow corn
- 1 large can crushed tomatoes
- 1 small can Rotel tomatoes and chilies
- 2 cans chicken broth
- 1 package taco seasoning, OR 1 T. chili powder, ½ t. cumin, and 1 t. salt
- 1 onion, chopped
- 1 green pepper
- 2 carrots, diced
- Simmer in crock pot all day or on stove several hours. Top with sour cream, cheese and tortilla chips.
- {This can be prepped beforehand and frozen. Combine all ingredients in a freezer bag, except for the chicken broth. Add the chicken broth the day of cooking. You don't even need to cook the chicken beforehand. Before serving, pull out the chicken, shred and add back to the soup. Cook in crock pot for 6-8 hours on low or 4-6 hours on high.}
