Incredibly Easy Overnight Breakfast Casserole
Make this easy, seven-ingredient cheesy, sausage breakfast casserole for your family. You will not only look like a rock star, but you will hardly lift a finger while doing it.
I’m here to tell you that this great recipe is the EASIEST way to feed a crowd (or your little family) and it’s so yummy, too! There are a ton of variations for it, so you can’t mess it up.
I love to make it when we have overnight guests or are hosting friends at the lake house because it’s something you can prep the night before, then just put it in the oven the next morning. I hate to be slaving over the stove when I’d rather be chatting with my friends.
But it would also be awesome to take to a tailgate brunch for a noon football game any Saturday in the fall. Or serve on a holiday morning like Thanksgiving or Christmas morning – when you have a lot of family staying over!
I use very basic ingredients, but essentially you can add whatever you’d like that pairs well with bread and eggs and add it in!
Some ideas for Breakfast Casserole Variations include:
- hashbrowns
- onion (cooked)
- bell pepper (cooked)
- mushrooms (cooked)
- green onions
- jalapeños
- rosemary
- thyme
Something that’s a little special about this quick and easy breakfast casserole recipe is that you use a crusty white baguette from the bakery to line the bottom of the pan.
Then when it sits overnight, the bread soaks up the eggs mixture and makes this fluffy, egg-y bread-y baked crust that is super yum and filling!
Instructions to Make the Breakfast Casserole Recipe
First, in a large bowl whisk the eggs, then add the milk, dried mustard and salt and pepper (small dash).
Then brown the sausage in a large skillet.
Spray cooking spray to the baking dish. Cut the long baguette into 1/2-1 inch slices. Layer them on the bottom of the baking dish.
Sprinkle the cooked sausage and cheddar cheese over the bread. Then pour the egg mixture over top and refrigerate overnight.
The following morning preheat the oven to 350 degrees and bake for 45 minutes. Easy peasy, big crowd is pleased-y. (Sorry about that… haha!)

Ingredients
- 6 eggs beaten with fork
- 2 cups milk
- 1 tsp. dried mustard
- 1 tsp. salt
- 1 crusty white baguette
- 1 lb. breakfast sausage
- 1 cup cheddar cheese grated
Instructions

Mix first four ingredients.

Then cover the dish with slices of bread.

Sprinkle sausage and cheese over the bread.

Pour liquid mixture on top.

Cover dish, then refrigerate overnight.

Bake at 350 degrees for 45 minutes.
